This dipping sauce is a bit nice too. and is a low gi recipe. I’ve added this to my collection, I think it will be handy to put out before a barbecue too when friends drop in, it’s so quick to prepare and the ingredients are usually on hand for me as I love apricot jam/jelly and of course Dijon mustard.
Apricot Mustard Dipping Sauce
3 tbsp low sugar apricot jam/jelly
4 tbsp water
1 tbsp Dijon mustard
Place all the ingredients in a small bowl and stir together.
Dip the vegetables and just eat and enjoy. You can blanch the vegetables if you like, I just like mine raw.
