Low GI Cream Sauce, So Versatile.

This is a nice recipe and like a lot of the other low GI recipes is so easy to prepare and well accepted by the family.

Low GI Cream Sauce.

125g (4oz) low-fat cottage cheese
2 tbsp light cream cheese
1 tbsp grated Parmesan cheese
1 small clove of garlic crushed
1/8 tsp ground nutmeg
1/8 tsp pepper

In a food processor, puree all the ingredients until smooth

The original recipe called for wholewheat fettuccine with tofu and broccoli sprouts but I liked it with either chicken and/or bacon and asparagus cut into pieces with a few button mushrooms. I’ve tried it with chicken and the bacon, both were very nice.

You know my family are having such a good time since I started this low GI diet, they are loving these meals and don’t know just how good they are for them either. :-)
